Consisting mostly of fresh and delicious cherry tomatoes, this simple salad is packed full of flavor. This dish could be served as a side, or atop a bed of fresh greens or cooked rice, quinoa, or millet to create an entrée.

Salad
 3 cups cherry tomatoes (use a medley of colors if possible/desired)
 ½ red onion
 ½ cup cress or other sprouts
 Chopped romaine or mixed greens (optional)
 Cooked rice, quinoa, or millet (optional)
Dressing
 4 tbsp extra virgin olive oil
 2 tbsp balsamic vinegar
 1 tsp liquid sweetener of choice
 1 garlic clove, minced (add more if desired)
 ½ tsp dried basil
 ¼ tsp Himalayan salt
 ¼ tsp black pepper

Thinly slice the red onion, and cut the cherry tomatoes in half. Put the onion, tomatoes, and sprouts into a bowl, and toss.

To make the dressing, add all of the ingredients to a jar with a lid, and shake well to combine.

Serve the salad, and pour on some of the dressing as desired.

Season with Himalayan salt and black pepper to taste.

To make this into a main dish, serve the salad on top of a bed of greens and/or cooked grains.
