Because zucchini has a very mild flavor, you won't even know there is a serving of vegetables in each portion of this nutritious and chocolaty oatmeal!

Zucchini is a type of summer squash that is low in calories, contains an array of vitamins and minerals, and boasts anti-inflammatory and antioxidant benefits.

 2 cups water
 1 cup rolled oats
 1 cup zucchinifinely grated
 1 bananamashed
 2 tbsp ground flax seeds
 2 tbsp cacao powder
 ½ tsp Ceylon cinnamonoptional, adjust to taste

Add the water to a saucepan, and bring to a boil on the stovetop (alternatively, use freshly boiled water from a kettle). Add in all of the ingredients, and stir to combine.

Reduce to low heat, and cook for about 10 minutes or until the oats are cooked. Stir frequently to prevent it from sticking to the bottom of the pan. If too much liquid is absorbed and the oats aren't cooked to your liking, add in some extra water as needed.

Serve the cooked oatmeal between 2 bowls. Add toppings of choice, and enjoy.

If you don't want to add the banana, you can sweeten the oatmeal with 1 tsp of coconut sugar or maple syrup per serving, or to taste.
