 ½ cup coconut sugar
 2 tbsp ground flaxseeds
 2 tsp baking powder
 ¼ tsp Himalayan salt
1 cup unsweetened apple sauce*see notes for homemade
1 cup unsweetened plain plant-based yogurtwe use coconut yogurt
 2 tsp vanilla extract
 2 tsp apple cider vinegar
Frosting Ingredients
 150 g vegan dark chocolate
 1 tsp vanilla extract
 1 ½ tbsp maple syrup
cup unsweetened plain plant-based yogurtwe use coconut yogurt

1

Preheat oven to 350°F.

2

Mix the wet and dry ingredients in separate bowls. Add the dry to the wet and stir until thoroughly combined.

3

Add the batter to a piping bag, and evenly distribute the batter in the donut pan. Wet your fingers to gently push the batter into the tin.

4

Bake for 25 minutes, and after removing from the oven allow them to cool in the pan for 10 minutes. Gently remove the donuts from the pan, and place them on a cooling rack.

5

While the donuts are cooling, melt the chocolate in a double boiler on low heat on the stovetop. Carefully remove the melted chocolate from the heat, add the remaining ingredients, and stir well to combine. The frosting should be thick and glossy. Dip each of the donuts in the frosting, and return to the cooling rack to allow the frosting to harden. The time will vary depending on the temperature and humidity of your kitchen.

Notes
6

Any remaining frosting can be refrigerated and used in other recipes.

7

To make your own apple sauce, core and dice 2 medium apples with the skin on, and add them along with the apple cider vinegar and vanilla to a blender. Blend until smooth.

8

If you want the donuts to be even chocolatier, add 1/2 cup of diced chocolate or chocolate chips to the dry mix.

9

You can optionally sprinkle cranberry, raspberry, or beet powder on top of the donuts when the frosting has hardened.

10

Store any leftovers in an airtight glass container on the counter for 1-2 days.
