This delicious and healthy banana bread can be eaten for breakfast, or as a snack or dessert with a nice cup of tea. And not only does it taste amazing, it’s vegan and gluten-free!

 1 cup Bob's Red Mill Gluten Free All-Purpose Flour
 1 cup oat flour
 ½ cup rolled oats
 ¼ cup coconut sugar
 2 tbsp ground chia seeds
 1 tsp baking powder
 1 tsp baking soda
 1 cup pecans or walnuts, chopped
 ½ cup chocolate chips (optional)
 4 ripe bananas
 ¾ cup unsweetened non-dairy milk (or water)
 ¼ cup avocado oil
 1 tbsp apple cider vinegar
 1 tsp vanilla extract

Preheat oven to 350 F/ 175 C. Line a loaf tin with parchment paper.

Mash the bananas until there are no large lumps left.

Mix in the oil, milk, water, vanilla, vinegar, chocolate, & nuts with the mashed bananas.

In a separate bowl, mix the remaining ingredients. Combine with the wet mixture and stir until well combined.

Pour mixture into a loaf tin, and bake for 1 hour.

After removing from the oven, let the pan sit for 1 hour.

Remove the loaf from the pan, slice, and serve.

NOTES

To make this banana bread oil-free, substitute unsweetened apple sauce for the oil.
