If you're in need of a quick yet satisfying lunch, this delicious Edamame Hummus & Balsamic Mushroom Toast can come together in about 15 minutes! This meal would also be great as a savory breakfast.

Make the Balsamic Garlic Mushrooms according to the recipe. This should take about 15 minutes.

During the last 5 minutes the mushrooms are cooking, prepare the toast and spread a couple of tablespoons of the edamame hummus on each piece.

When the mushrooms are done, divide them between the pieces of toast. Garnish with a few pinches of sesame seeds and some greens (you could use sprouts, chopped cilantro or parsley, baby greens, etc).

We recommend you prepare the edamame hummus in advance.

If you don't have any edamame hummus, you can use a different type of hummus instead.
