No matter where you are, these healthy Pina Colada Overnight Oats will have you feeling like you're in a tropical locale!

They're quick and easy to make, taste wonderful, and are naturally sweetened with pineapple juice. Yum!

  cup rolled oats
  cup Instant Pot Oat Groat Yogurtor other plain unsweetened plant-based yogurt
 6 tbsp unsweetened plain oat milk
 6 tbsp pineapple juicenot from concentrate, with no additives
 2 tbsp chia seeds
 2 tbsp shredded coconut
 ½ tsp vanilla extract
 ¼ cup diced pineapple

Mix all of the ingredients - EXCEPT the pineapple chunks - together in a glass jar or bowl, cover, and refrigerate overnight.

Divide between 2 bowls and add the pineapple and some extra shredded coconut or coconut chips if desired. Enjoy!

Additional toppings can include diced mango, sliced banana, chopped macadamia nuts, hemp hearts, etc.

You can experiment with the amount of liquids to reach your desired consistency.

We created this recipe using organic canned pineapple in pineapple juice (it was the only pineapple we could get). But if you have a juicer and some fresh pineapple, you can make your own pineapple juice.

If you don't want to use oat milk, use a different plant-based milk of choice such as almond, cashew, or hemp.
