A tasty dish with a tropical twist, this pineapple avocado salad would make a great side, or could even be put on a bed of lettuce with some pre-cooked beans, lentils, or quinoa to become a main meal.

Salad
 2 large avocados
 1 ½ cups fresh pineapple
 ½ cup radishes
 1 15oz tin chickpeas (optional)
 romaine or mixed greens (optional)
Dressing
 ½ cup fresh cilantro
 2 tbsp extra virgin olive oil
 2 tbsp fresh lime or lemon juice
 ¼ tsp cumin
 Himalayan salt & black pepper, to taste

Chop the pineapple and avocado into cubes, and thinly slice the radishes. Put them all into a mixing bowl.

(Optional step) Drain and rinse the chickpeas, and add them to the mixing bowl. Adding chickpeas is a great way to bulk out the salad, and adds some extra protein to this dish.

Chop the cilantro.

To make the dressing, combine all of the ingredients in a small bowl, and whisk until well combined.

Top the salad with the dressing, and gently toss, being careful not to squish the avocado.

To make this into a main dish, make a bed of chopped romaine or mixed greens on a plate, and top with the pineapple avocado salad. Add some cooked and cooled beans, lentils, or a grain such as quinoa to add protein.
