Say goodbye to store bought granola! This perfectly crunchy Pumpkin Spice Granola is delicious, healthy, and super easy to make.

Additionally, it contains about 7g of protein per serving!

 3 cups rolled oats
 ½ cup pumpkin seeds
 ½ cup walnutschopped
 ¼ cup pumpkin puree
 ¼ cup sunflower seed butter
 ¼ cup maple syrup
 1 ½ tsp pumpkin pie spice
 1 ½ tsp Ceylon cinnamon
 1 tsp vanilla extract
 1 pinch Himalayan salt

Preheat your oven to 325ºF and line a baking sheet with parchment paper.

To a bowl add the pumpkin puree, sunflower seed butter, maple syrup, cinnamon, pumpkin spice, vanilla, and salt. Whisk until smooth. Add in the remaining ingredients, and stir until well combined.

Transfer the oat mixture to the prepared baking sheet and press it into one even layer.

Bake for 20 to 25 Minutes. Spin the tray 180º halfway through.

Let it cool completely before breaking it into clusters. It will harden as it cools. Enjoy!

Refrigerate in an airtight container for up to a month.

If you don't want to use sunflower seed butter, you can substitute a different seed or nut butter of choice.

If using 3 cups of rolled oats, it will result in around 5 cups of granola.
