Crisp on the outside and tender in the middle, this Socca (Chickpea Flatbread) is quick and easy to make, plus it only requires 3 ingredients!

 1 cup chickpea flour
 1 cup cool water
 ½ tsp Himalayan salt
 ½ tsp dried rosemaryoptional

Add the chickpea flour, water, salt, and rosemary (if using) to a bowl and whisk until there are no lumps. Cover and set aside.

Place a well seasoned iron pan on the middle rack in the oven, and preheat oven to 450°F.

Once up to temperature, very carefully remove the pan from the oven, and pour the chickpea mix in swirling it if necessary to get it to the edges of the pan.

Bake for 15 to 20 minutes, or until it has firmed up and the edges are crisp and the top is golden.

Allow to cool for a few minutes, then carefully transfer to a chopping board or plate and cut into triangles. Enjoy!

You could serve it as a pizza base, with hummus or other dips, with stew, or enjoy it by itself.
