In this very berry parfait, layers of granola, coconut yogurt, and blended berries come together to form a delectable and filling creation that could be enjoyed as breakfast or dessert. It is almost as good to look at as it is to eat!

 1 cup granola
 1 cup unsweetened non-dairy yogurt
 1 cup fresh mixed berries
 2 tsp maple syrup
 ¼ tsp vanilla extract (optional)

Blend ¾ of a cup of the mixed berries until smooth. If it won’t blend, add a little bit of water.

Mix the maple syrup and vanilla extract in with the yogurt.

Begin assembling the parfait by putting 3 tbsp granola in the bottom of 2 wide glasses or wide rimmed mason jars. Add 3 tbsp yogurt to the top of the granola, and ½ of the blended berries onto the yogurt.

Repeat step 3 to make another layer of granola, yogurt, and berries.

To finish the parfait, top with the remaining granola, yogurt, and the whole fresh mixed berries.
